I'm in the second week of drying on a deer head and noticed a slight smell coming from the ears. I assume I didn't take enough of the meat off around the ear butts. What can I expect to happen. Will the smell go away eventually? Suppose I'll put a fan on em and hope for the best. Seems like a guy can never be thourough enough on a deer cape.

You can't take enough meat off the ear butts, you have to take it ALL off. If you want to keep smells and bugs from happening you can't leave any meat any where in the mount. It's possible that you only left a very small piece and after it is completely dry it will probably stop stinking, But until that happens you risk bacteria building up and of course slippage, so don't be touching the ears much. Make sure that you use some kind of bug proofing, like
Protex Mount Care or something, and redo it every 1 1\2 - 2 years. If this is a customer's mount you may want to give them a small bottle of it when they pick up there mount with instructions how and when to do it. I don't know how bad it smells but the worse it smells the more you may have left in there, keep an eye on it, try the fan, bug proof well, and once again don't touch the ears. Oh and one more thing look into the ear canal and see if there is a build up of ear wax. This will also cause an odor and if it is excessive you will notice it
no febreeze wont work but if you are going to mount a deer and you want a happy customer than you need to take the time to do your job thoroughly not halfed a#* you will loose more than just one customer when he gets that deer back.so take the time and do it right the first time.
I'm glad I can always count on a smart ass in the Ole Taxidermy.net. 30hrs I spent on this deer, enough in my mind and I am very freaking anal about my work not just "Half Ass" so have a nice day nuckle head. If I ask a question in here I'm trying to learn not get busted on, but hey what ever makes you feel better.
SMELLS LIKE DP WAS USED IF SO PUT IT BEHIND THE GARAGE AND WON'T SMELL IT.
