Can anyone tell me the difference? Seems like the matrix between the two is not the same.

Straight or raw linseed oil is extracted from flax seed and provides a quality oil that dries very slowly. For painters and flat artists, however, this slow drying is not very effective. So the oil is boiled to remove some moisture and chemical "driers" are added to enhance the drying times required.
I knew there had to be a difference. I guess boiled is the way to go, unless you enjoy watching paint dry.
