Bob I take the cartilage out of green capes but I do it a little diffrent I dont cut the ear cartilage after I turn the ear I start down close to the ear base on the side where the cartilage it the thickest which is the side facing the antlers. Most of the time I just start picking at it with my finger nail till it starts to peel back ( somt times I have to use a scaple to start it)just keep working your finger between the skin and cartilage till you are half way across then work your way to the tip then down the other side most of the time in one piece
