Rough skin out a FRESH fish and then vacuum seal it and then when i have time finish thaw it out and finish fleshing and then preserve it and continue to mount?

one of those giant Lake Gogebic perch, then one should have stuffed YOU(LOL). There's a fella on here once in a while called HANK who lives out in your neck of the woods and says Lake Gogebic perch are so big they eat da walleyes...eh? I drink he thinks alot.(LOL)
On my wall, one was the 5th largest for the State of Michigan that year. THey are both 15 inches long and just over 2 lbs. My buddy caught one a few years back, and if I'm not Mistaken, it was the largest for the State of Michigan that year..
We get some BIGUNS out of that Lake.. Guys are catching them on tipups when fishing for walleyes with sucker minnows.
I do dozens of dozens of big perch and know that any 15"+ are the true giants of the species. Lake Gogebic is among the top 4 in Michigan for really big perch. Hubbard Lake super jumbos are caught the same way...big minnows on tip-ups for walleyes.
