How long should I let an oversized redfish dry after mounting it before I go to paint it?

It would depend on the mounting procedure.
If you used the real head, I would let it dry at least a month, maybe more.
This allows for the shrinkage to be all finished before you rebuild, do it too soon and you will have to do it a over!
If you cast the head and mounted the skin only, then you should be able to do the finishing in a couple weeks.
All this depends on good degreasing procedure, temperature, and humidity.
