O.K. guys,heres a quick question on a black buck.Ive got him skinned, turned out and in the first salting. When I got to the large gland below the eyes, I cut away all of the yellow fatty stuff, down to the skin.Is there any thing else special I need to do with this part of the animal?(besides the pickle, tan etc..)Looks like it has the potential to stink later on. Any tips or imput would be greatly appreciated.
