Chad,
The best thing I have found is a skife knife. I take most of the meat off and then salt the hide. After it is dry a rehydrate and pickle the hide. After it has been in the pickle soultion for a couple of days I will take it out and actually thin the lips, around the eye and nose. This is where the skife really works well.
If you use a commercial tannery then you will use the skife when you get it back from them and rehydrate it. Hope this helps.
