Question about noses.

I am getting ready to do my first deer this year. I will have acess to one that my uncle had raised on his farm and I am plannin on skinning it and seeing if i can get a taxidermist to flesh/shave it. Aways when I am skining to the nose will i want to cut it so some cartilage is still on it? This is what I usually do on squirrels. Then how do you split it? I watched my Sallie Dahmes squirrel video and you talks about splitting it but i cannot soo what she is cutting. I always just left it with a little cartilage on. So what do I do with a deer to split? Also please inform me how to do a squirrel if you think i'm doing it wrong. Thanks for the help-Sam

Your question is so basic to deer taxidermy and so far removed from squirrel taxidermy, that the only valid suggestion I can give you is to freeze that hide and get a deer fleshing video. No cartilage is left in a deer nose and the nostrils have to be fleshed out completely. It's much too detailed to go into here. Buy the video.
