What's up with the changeout forms I'm seeing in newer catalogs
did folks order the wrong pose to start with or what?

Rich they are often used to change the eye to nose measurement. The form you want may have the correct B measurement but wrong e-n. You can either alter the head on the form or just change it out.
Sometimes you get anatomically incorrect specimens that require different parts. I had a hell of a deer last Sat. that I mounted, it had the weirdest fat (wide) head I've ever seen. So I had to changeout the head to a bigger head, of which also required a nozzle adjustment too. So no, their not for the wrong form ordered, just to better fit the one you have.
