when drying a deer mount, which is better, a room without a/c and a fan circulating air on mount,(80-90 degrees) or an air conditioned work area?(below 78 degrees)

Of your two choices, I would say with the a/c. You need to watch and groom your mount as it dries. Drying too quickly is not good. I'll even put plastic over mounts so they won't dry too fast.
If you are in a basement or area that is damp try adding a de-humidifier. If not the AC should keep the right amount of humidity in the room.
