I'm just getting started into the taxidermy world and have done a few deer heads. Does the same concept apply for most gameheads such as antelope, elk, moose just to name a few? I do understand referances are very important.

The basic concept applies to all. There are differences, but as the saying goes " if you can mount a squirrel, you can mount a deer or anything else". Alot of the differences apply on the finish work.
