I have a just barely record whitetail I am doing for a customer and am wondering if anybody mounts them any different and does anything extra special with them compared to other customer mounts?

I give them all the same treatment...from the spike horn thru Godzilla. The customers are paying the same price aren't they?
...To a more elaborate mount(more expensive). I've found that it's very easy to "sell up" the customer with the record book trophy into a specialty type mount. That would be a wall mount with habitat, a wall pedistal or even a full pedistal mount. After all, this is usually a once in a lifetime trophy, they "should" do something special with it.
Once you realize how easy it is to "sell up", you will start doing it with the "average deer, too. It's kind of like being in the restaurant business, when they come around with the desert cart after your meal. If they can "sell" you on the desert they actually double their profit.
I would try to make it one of the best mounts I have ever done. If it is large enought for a Boone and Crocket entry than you can bet a lot of people will want to take a look at it.This also helping show off your work on the mount.So you dont want to just give them the average deer head make it stand out. This could be a great time to promote your business.
