Here's what I do for commercial mounts. Gather reference photos! Buy or cast an artificial nose! Paint the entire nose and inner mouth with a flesh color (I mix it to match a fingernail, as javelina mouths are rather pale). Then mix a dark brown for around the eyes, outer nose, and outer lips. On the front of the nose gently and sparingly use gill red here and there to give some accent. Do the same in the mouth. Then I gently dust the nose with burnt umber to dirty it up a little and to tone it down. Finally I add a little "wet for the wild" to moisten the nose and lower eye lid. With a little practice this schedule gives a real nice effect. Again, I stress the reference photos and the artificial nose, there is already enough javelina out there with the black flat noses and bowling ball holes filled with wax. Good luck!
