Sorry, but there is no good "easy" way of removing any ear cartilage from any mammal. It is fairly straightforward, but tedious work. You just need to commit yourself to do it and do it right.
And on the subject of artificial noses ... do not go there! They are a frigging waste! First of all, they are cast off of a dead animal ... not much there in the way of reproducing a living animal's nose. Plus, do not go and start cutting the noses off of customer's hard won trophies!
Use them, and photo references, as guides to mount the actual nose skin. Try carving the details on the nose of the mannikin you are using, and fit the skin over that. A layer of clay under the skin will go further to help you shape the nose.
All this information -- ear cartilage removal, and mounting of cat noses -- is covered in the book I wrote: The Breakthrough -- Art Of The Big Cat -- Manual. Most all the supply companies carry it. Although it concentrates on working on an African Lion and a Leopard, the techniques for cartilage removal, and nose rebuilding apply to any and all mammals, not just the big cats. Trying to describe ear cartilage removal without you being able to see it is frustrating at best!
Also, allow me to recommend the ear liners carried by McKenzie. I believe Joe Ferebie molded them, and they are ass-kicking in a mount! Very well made and detailed, easily trimmed, and will stay in place when glued in with a good hide or ear epoxy.
Best of luck to you.
