about salvaging protien from taxidermy specimens for personal consumption. i have always wondered about what bear meat was like. now , i think i have a good idea and will seek out a hunt sometime in the not too distant future. i was wondering if you have tried moose. i live in the southeast, but i have been applying for a moose permit in maine for a few years. i doubt if i will spend the money for a moose hunt if the meat is not pretty good. what does it compare to?

Moose meat

Hi Steve,
Man if you get a chance for a moose tag, you'd better jump on it! My opinion is that it's the best eatin wild game there is. There's nothing like cattle, but moose meat is very much the same. Sure, you'll hit a gamey cut here and there but overall it's some sweet meat man!

It's loaded with vitamins and minerals - even compared to most wild game, moose is by far the leader for healthful eating. Get a moose and you'll never want to go back to beef.

While I like moose as much as the next guy, I think we have you confused, sir. I probably wasnt the guy who wrote the protien salvage article...unless you listened to me talk to Jean Lavolie about lobsters! Sorry, guy, but good luck moose hunting anyway!

I'm from the south so we chicken fry EVERYTHING! We made some chicken fried steak out of the first bear I killed and man it was great, I was really upset I'd already given some away. So the next bear I killed I couldn't wait for some chicken fried steak. Well when I sat down to the plate it wasn't fit to eat....my dog even froweled when I gave to him. I finally had it all ground up into summer sausage. Now I have several years supply.

You wouldn't think them big "so ugly they are cute" animals would taste good, but moose is VERY close to beef. And much better for you. Although I can't commit to saying it's the best wild game (big beast)there is out there, as there ain't NOTHING that compares with Elk meat!

Oh and Steve in Geneva, have you read Bill Yox's article on what to do with a customers mount that you really want to have for lunch? GREAT article! Packed with great recipes and how to's for getting by with bare essentials! Even explains how to get a free salad by whats in an upland gamebirds crop!
