I have a question on turning the ears of a squirrel. The first squirrel I did, I managed to get the ears split. I have just finished my second squirrel, but had poor success with the ears. When you are looking at the flesh side of an ear.....Where do you start splitting? I cannot decifer where the base of the ear is. I am starting my third squirrel today, and any pointers would be appreciated.

Here´s how I do it...
I never use a scalpel at all, I use a narrow blunt tool of some kind, usually a forceps and move in between the skin layers using small, side - to side movements, going from the base of the ear toward the tip. It´s hard to explain in english (I´m swedish) but belive me it´s easy. Use your non-dominant hand and hold the ear so you don´t pop through. Once you get the hang of it I am sure you will agree when I say that squirrel ears are the most easy to turn. Or, you do not actually turn them until you have formed a nice little "bag" or "purse" of the skin. Then you can grab the tip from the inside w the forceps and invert the ear. Good luck.
