If your only going to eat it grab it by the back and hold some skin in both hands and pull. It should come right apart for you then gut and fix. Skinning one to mount well take a piece of toilet paper wet it roll it up in a ball then try to open it back up to make it look like it did before it was wet.
get a taxidermy book on skinning there is a lot of them out there do this befor you go killing the toilet paper thing really dosen't work to well never did for me good luck

But you might want to check around im NOT an expert
for food, you just cut a cirlce around the hindleg ankles, and then start on the inside of the hindleg and cut down the inside, across the rear, and up the other leg. Then pull off the skin like a sweater.
before skining or gutting the rabbit run your thumb down its front till you find its gender opening push your thumb in above this hole and it should piss.
I have a method first pis i then if ur gonna eat it snap its left leg down cut a small part out and pull off the skinn gut it and eat or save it
The best way that i grew up with is to cut a horizontal incision on its back, about an inch. Stick you two fingers from seperate hands and pull away. When you get to the legs, you can cut them off. Then gut it by cutting from the ribs to the anal, right down the center. (Do it lightly, as not to puncture the intestines.) Then face the belly full of guts towards the ground and give it a fast, hard, shake. Most of the guts should fall out, or be hanging there. You can just clean the rest out. Cut off the private parts, the feet, and the head. Soak it in saltwater overnight 6-8 hours. Makes a fantastic treat.
The way that i was taugt was to well first fielddress it and then make a cut from the anual to the hind legs about 3/4 of the way up the legs. Then flip the rabbit over grab the fur by the anual grab and pull (very Gentaly) pull around leggs and head and your good to go.
