i have hunted for so many years for dear and this is the first year i have received a bear kill permit. i would like to have complete instructions on how to dress out the bear in the woods correctly. I wish to do this correctly as to save the meat and the hide.

.....That you are planning on having do the work. Get instructions from them directly. Many of us have certain ways we like things done, depending on what you are going to have done with the bear. Rug, half lifesize, lifesize or just a shoulder mount? If you are close enough, go visit and get the instructions first hand. If you mess up the skinning you will pay for the extra work that it takes to correct it, or if you are planning on selling the skin you can make it worthless by improper skinning.
If you plan to harvest an animal, it'll never happen. If you go into your hunt clueless you will DEFINITELY harvest a trophy bear!
Best to subdue the bear by lethal means, they get real grumpy when you cross drees them.
