What is best to use to fill the toes and pad are on coyotes to give the a full look? I thought about clay but wondered if a good thick 2 part epoxy wouldnt be better? What is best suited for this area?

Use a quality clay like critter clay that does not shrink. This will allow you some work time and you will be pleased with the results.
Since you are a beginner use clay, it will give you time to adjust the toes.
After you have it down pat, move on the the 2 part clay type epoxies.
