I am thinking of mounting some kind of mammal. I was thinking squirrel or chipmunk. Are those good for beginners? If not, what is the easiest thing to mount there is?

squirrels are easy to come by, and not expensive for materials, but do not be dissapointed if you mess the first few up skinning, and i feel, to do them right, their about the dangest to skin as there is.
ya got to get them little toes skun down to the last didget, here i use an exacto knife with the pointed blade. skin around those front teeth and use the real teeth in your mount, it will be challenging and rewarding. best of luck

More advise

Yes, a squirrel would be a good start, but before skinning your squirrel, take a hypodermic needle and syringe filled with water. Insert needle on the top of the paw into each paw above the toes and hydrate them. You will see the water filling each of the toes. You can do the same with the ears. This way when your down to skinning these delicate areas, they will work with you, instead of against you.

thanks
