i have a customer that wants a coon but wants me to supply it. I'm not sure how much I should charge for the hide. i plan to charge my normal price for the mount.

Fine a supplier that has a coon then with that price plus shipping, then on top of what you charge for the life size , Don't forget the base work and habitat. You will have an idea what to charge for the coon,or if you (already) have one you should know what you got in to it ,time /labor LOL
