Has anyone here, fleshed a large hide (lets say, bison, horse, or cow size) by hand (with a fleshing knife and board)and tanned it? How long did it take you? How did you schedule your time?

Do not do a cow cape at home. It is to large and by hand it will not come out thin. You will end up with a big thick piece of cardboard.
