Case skinned and dorsal skinned are the two ways they are done. Either way works good for a life size mount. It comes down to personal preference.

dorsal is smartest on nearly all mammals...

That's not a word that's used in taxidermy a lot to begin with. My take is that the LESS cutting you do on ANY animal, the better it's likely to look.
