Using a white colored casting material

And some very white sand will help out alot.
I have used sandblasting grit before too. Some of it is a very nice white color and makes a nice looking white.
It would probably be better for a marble looking statue to be a very fine sand, minus #50. For a granite, you can use a lot larger size sand, and through in some different colors as well.
You can mix up the resin first with hardner, then after it is fully mixed, though in different colors and just mix it a little. then pour. it can cause colors to swirl and group differently and make a very interesting piece.
Using a clear resin, and then adding a small amout of a white, transparent non-water based paint, will add to the look as well

Approx. 20-25% salt as a ply-substance

I ran into the exact same problem when attempting to decast a heat pressurized resi-mould out of medium weight sand. Apparently fossilized shark teeth are in such abundance that it has become viable to utilize the granulated bicuspids for this kind of project. But it's kind of one of those instances where you can't remember if you dreamed hearing that or if someone in real life said it. I'm sure though in a magazine I read that 20-25% salt added to the precasted ply-substance (or maybe it was by-substance, I was waiting to get my teeth whitened in the dentist's office when I read the magazine, so I wasn't paying much attention) will do something, and it seems like white is what you're after, and since salt is white, I figured I might suggest it. Let's pray to God this works!
