what would be causing mold to form in pickles? i have followed instructions that come with the pickling crystals. after a couple of days it starts to smell of mold and some of the hides do start to show signs of slippage. i was wondering what would cause this problem and is there any other possible corrections other than possibly adding a fungicide. if possible could an answer be sent to my e-mail address vanhornj@katewwdb.com, because i have limited access to a computer but i can pick up my e-mail messages by phone.
1.5-2.0 is where the pickle should be at all times. Never above 2.0! Get some pH test strips from a supply house and use them.
