When pickling do you let it float or put something on it to sink it to the bottom?

As long as you are turning it over every day, it doesnt make any difference.

Just turn it once daily?Can PH be too low?

Once or twice a day is fine........but

As you can find in the Archives, be sure you check your PH daily.A PH of 1.5-2 is ideal. Anything below the 1.5 mark can cause acid burn. So, maintain PH of 1.5.
