Salt it and allow it to drain for 1-2 days. Then shake out this first salting and salt it again for 1-2 days. Then shake it out and hang it to dry. When its rock hard and the skin has tightened up the hair in the epidermis - then rehydrate it, rinse it, and its ready to be pickled.
Salt promotes rapid drying by drawing out the unwanted fluids from the flesh. Keep the hair as dry as possible while the skin is salted -but allow it to drain away from the skin by placing it on a slanted piece of plywood - or on a plastic milk carton where the fluids drain through and away.
