Does any one know anything about tanning a hide with a double coat of wool?
I am haveing some trouble trying not to let it felt up and knot.

Sheepskins tan easily - however, their wool presents a problem! Especially in this case.
I would tan it like I do normal sheepskins. But after the tan I would remove it, rinse, and then place it in an old washing machine and run it on the "spin" cycle to remove the bulk of the water. Then carefully oil it, set it aside to soak up the oil for 3-4 hours, and then instead of tumbling - I would toggle it out, or tack it out in a frame to dry. When 98% dry - I would arm stake it soft.
