I have a shop that stays just above freezing temp when i'm not there. Will this effect the lenght of time that a hide should be in the solutions?

Not only will it take longer, but you will have compromised the efficiency of your acid pickle even. You can demonstrate for yourself the contraction of a skin that takes place at temperatures below 64-66 degrees F. Efficiency of finishing products such as oils will also be far less effective.
The cold has slowed down molecular activity of your chemicals and contracted the skin.
