I have a beaver that i skinned, and it is drying right now. I got most of the fat off but there is still a little around the head. Is it alright if it drys and then i get the fat off.

What are you going to do with it? Just dry it, tanning etc,what exactly are you doing with it? Regardless you should try to get all the fat off this will cause problems down the road.
I will most likely put it on my wall
