I am fleshing a raccoon and i was wondering if someone could tell me how to tell when all the fat and membrane is off. I am using a two handled fleshing knife and a beam. Thanks

I know that sounds obvious, but you will eventually flesh down to the skin. The skin on a prime raccoon will be a light cream color. You need to remove the heavy layer of fat and then the red membrane. Sometimes there is even a little fat under that membrane.
