Why do I Oil when wet tanning?
What would happen if that step was left out?

Eventually your skin is going to dry............

after it is mounted. The oil in the skin will keep the leather from cracking, especially in visible areas such as around the eyes and nose. Not only that but you will get excessive drying after the skin is on the form, enough so that you may actual break open your stitches. Oiling is a important step no matter how something is tanned.
