Is it alright if a coyote is in a safety acid pickle for about 5 days and then tan it using ez-100.

Yes - it's OK to then tan it. Actually I've left samples like Coyotes, Beaver and Whitetail Deer skins safely in my Saftee Acid pickle for up to 6 months with no problems! As long as you stir the pickle once every day and check the PH every 2-3 days, you can safely use it, and then neutralize and tan later.
