How clean is clean when taking the flesh and fat off the deer hide?

CLean or fleshed means white skin! No red meat. no yellow fat.
While salted does it have to be rolled up or is it ok to stretch it flat.
Ive seen it done both ways . I always lay mine flat on a rack that I built . Seems to dry the capes a little faster than rolling . Also gives the liquid a chance to drain easier . Ive have seen liquid get trapped in pockets that are created when you roll up a hide .
