Though there is no "real" accepted definition of either.
One definition of pickling: It is the pocess of acidiying a skin to kill bacteria, flush out fat and soluable proteins, make the skin easier to shave, and prepare the skin to attract the tannins.
Fleshing, salting, rehydrating and washing, pickling, shaving, defatting, and neutralizing are only preparation for tanning. Which is simply introducing a chemical to stabilize the skin.
