My husband and I direct market about 200 head of young beef (age 14-18mo) each year for the natural foods market. These beeves are pasture raised, have never been in a feedlot, and are raised according to organic practices. They are processed in a small, very clean, USDA-inspected facility. We are wondering if there is a niche market for either the hides or skulls. Would appreciate any feedback or suggestions. Thanks very much!
