I recently saw a 35 year old whitetail mount that looked... well... awful. The tone of the hide was really yellow. It was hanging in a shop that is usually heated by wood stove, but other recent mounts that I know were tanned looked fine.
I'm wondering if it was a DP mount. Is this what they do after that long? I don't mean to cause bloodshed on this topic, I'm just curious what might do that.

Just the attrition of time and UVB, UVA and smoke, heat, neglect and whatever. DP or Tan processes both are subject to fade over long periods of time. The only other possibility would be the effect of grooming materials or what have you. Neither process will protect the hair from those agents.
you would be surprised what years of cigarette smoke, and any other smoke will do to a mount. The white parts of my bass on the wall are also dis-colored.
