I have never owned a beaver before, but I have owned a Dakota V and a Quebec. I just bought a Dakota pro and it is the most awesome fleshing machine I have ever seen or used. Every is stainless and machined aluminum. Easy cleaning and easy blade removal. Guards can be micro adjusted inward, outward, and a tight to the blade as want it. If you wanted, you could adjust the guards to touch the sides of each blade. Believe me, I am sure the eager beaver is a great machine, but I will never trade my Dakota pro for one.

I'm debating on the Dakota V or the Quebec. How would you compare the two? Which one do you like the best? I'm using it mainly for deer, but I do a few elk, bobcat, and coyote too...

I've got a used Quebec flesher, which I like a lot. The new Quebec Lite seems like about the same machine with a plastic housing. They should be a good buy for the money spent. I've heard a few complaints about the "OLD" Dakota machines. The new Dakota professional model looks like a dream come true. I'd definitely check that one out. To be honest, I don't have much fleshing experience yet, and all I really know for sure, is that a full sized fleshing machine beats the heck out of a mini-flesher....
