What did you r pickle ph read? It should have been between 1.5 and 2Try adding some baking soda until you get a ph of about 6.

Are you neutralizing the cape in the pickle?

Some pickle instructions say to add 1 tbs. of baking soda for every gallon of pickle at certain intervals, I believe that is where the PH of 5 comes in at, when I'm using just a straight neutralizing bath I mix 1 gal. of water to 1 tbs. baking soda and soak for 30 min.
