Wondering if theres a big difference for bear hide tanning in a 6 foot drum vs an 8 foot one. I have the materials fr both so wondering if I should go with a bigger one for the extra drop and will that mean softer hides?

If you have the space and capability to build the 8' tumbler go for it. I am sure you will be much happier with it. I wish now that I had built mine 8'.
