I have noticed the same thing on some hides, I beleive,if it is the same thing I have looked at, that it is blood or fat or anything left on the hide before it is salt dried. The hides that are clean before salting come out white after they are rehydrated thoroughly washed and then put in the pickle. They all have a nice uniform color after they are dried and tumbled no matter what they look like before. I am no expert like Bruce or some of the others on this site, but that is what I have found. I hope this helps.
