Recently I have been having some problems with the noses on elk and bison cracking during the drumming process. I try to shave them pretty close, could that be a problem? Any suggestions would be great.

It could be that you are shaving too close or they are drying out in the process of drumming. Try leaving a little skin on them and shaving after they are drummed this may solve your problem ,Mark
