A fish mounting video is what you need.

The mounting process is the same for perch as any other skin mounted fish that don't require artificial parts. Smaller fish so you need to take a little more time skinning/fleshing so not to tear the delicate skin around the gills, throat latch, and fin butts. I would recommend buying Tom Sexton's "Largemouth A-Z" video and try using that for standard fish mounts where no artificial parts are needed. Even after school there are always different techniques that may be easier to become proficient at, and may increase your productivity. Try a few practice fish before any commercial work though, and don't get sloppy. As for painting; obviously use reference material from your locale as there are variations in color throughout various regions. Hope this helps a little.
