I don't know why it's taken me so long to build on of the contraptions. Before this I'd do my salting on a tarp and let the juices fall as they may. This always created a good mess. After comparing notes with a few colleagues this is what I came up with.
It is on rollers and the design allows access to it from both sides.

It's purpose it to have salted capes draped over the rods for draining. The fluids pulled from the skin collect into gutters and ultimately into a bucket.

The rack is approximately 5.5" tall, 26" deep and 5' wide.

    Gutters installed

Be sure they drain to the bucket!

Seal any gaps. here I simply used painters caulk.

    Caulked.

Panel sections installed to collect and direct fluids and salt to the collection bucket.

Great idea and job. I like the casters on the bottom for easy moving too. Now I have got to build one. Thanks for sharing. ;)

I need to build one of those.

  15. How much money would it take for someone to drink the bucket of juice? [sorry, my sick mind at work again :-[]

That would depend on how many beers were being consumed. That would be one hell of a Friday night clean up the shop dare! Ugh! I'd pay $5 to someone to drink a tablespoon of the ol'slurry!

Nice rack. Cool plan. Mine is a 4x8 sheet of plywood with plastic on it screwed to the wall at a slant with a rain gutter on the 8 foot edge. Then I take plastic bread trays and set on top of that. I can get 4 to 5 on my rack but I have to flip them so they can drip good. your way is much nicer as well as it would be nice to walk around it all . As well on wheels . Very nice. And YES very clean looking shop.

LOL What an idea for fear factor. (Is that show still on - I don't have cable any longer)

Seriously though, this is a great idea. The only thing I might change is to use vinyl siding instead of the panel boards.
