How I Skin Birds

    This is a follow to the leg to leg incision thread created earlier in the week.I had some time so I figured I'd post my methodFirst ill skin the head.i start slightly into the bill then come back after fleshing to clean it up. IMG_1278.JPG

    I start my incision where the light feathers on the belly meet the darker feathers on the under side of the leg.if you wet these feathers and seperate them in a slight arc you will notice a nice area to make your cut.work this towards the head and ent as much as you can IMG_1280.JPG IMG_1281.JPG IMG_1282.JPG IMG_1283.JPG

    Now to seperate and remove the legs.it may seem tight but you can get in there.my thumb is at the joint.just get in there with your scossors and scalpal and seperate the joint.Be care ful and take your time.you dont want to rip the incision.once the meat is off the bone remove the leg by cutting along the feather line.     Next just work your way to the tail quills.once you're there simply cut through and work your way down the back to the shoulders.my pointer finger is at the joint with the scalpal showing about where to release it.
