Goose Wings?

    Got a couple questions on a landing goose.do you remove the wings or just invert them? And do you make a breast incision or leg to leg incision? Thanks!

    Well Doodle, I was hoping that one of the more seasoned vets would respond, but since no one has I will tell you my technique…at least it will refresh the thread.
    I don’t invert geese. I inverted the first one and it was very difficult. I make an incision under the wing all the way to the end of the wrist. Excavate all meat, rub good with borax, install wires(16 GA in wrist and 12 GA on the rest, wire tied to bones), rebuild muscle with cotton, then sew it up with close stitches. It is easier to hide the incision than you may think. This is the way I’ve done several geese. However, since learning to remove wings on turkeys with great results, I have a goose in the freezer now that I’m going to experiment with, removing the wings like a turkey.
    Regarding the incision, I do a breast incision on geese and ducks; leg to leg on turkey. Haven’t tried leg to leg on a goose. Yet….
    Now maybe we’ll see responses from the veterans. There are many ways to do this successfully.

    On a landing goose I invert or make a cut and remove meat, depending on the damage to the wings. I prefer to invert

    Thanks everyone for the replys.ive searched all over the forums and internet for any pictures or videos that show how to remove them.aint had no luck.ive got a goose to skin now been studying it for 2 days now and can't figure it out.l see no way you could hide it or I should say no way for me to hide it.THANKS FOR THE REPLYS!
    Does any one know of a video to purchase that shows how to do this?
