you can cut some hare from the back and glue it in to match.
i would fix it be for you mount it. it looks big. i would cut it out and sew it up. you can move the skin around wile its still wet till it dries....

i have used a small plow torch to clean it up (keep away from the antlers;)) or use salt on it.these are what i use.

i use water base paint.i use a white color. not real white. then i use a artest brush to put on the stain.i rub to hard and rub the paint off.lol....
