How do you determine the customer price for sending a skin/hide to a tannery for tanning; i.e. if the tannery charges $25 for tanning a mink, what do you charge the customer? Is there a difference in tanning charges if you have to skin the animal versus, the skin/hide coming in already skinned?

If you talk with a tannery they usually tell you double to triple the price. You have to figure your time in it, shipping cost back and fort, plus profit. Just for deer capes I get $125.00 and the client has it skinned out for me.
Now take your mink. You had to skin, flesh and salt it. How much time did it take you? Now what are you worth an hour for this? How much time did it take to package the mink and get it sent to the tannery? How long did you talk with the client? Yes all of this in needed to figure out the right price for doing work. This should get you started.
