Green mold???

  1. Wow never had this happen, mixed up fresh pickle pH of 1 to 2 on two different brand of paper. This was Friday.. this AM there was green mold in the pickle.

    I sterilized the vat before mixing the fresh pickle.. This is something in 30 odd years I have never had happen before.

    Any ideas?

    What changed?

    Salt?
    Acid?
    Water?
    Temp?
    Hide prep?
    Wash the hides or straight to pickle?

    Molds need nutrients to proliferate....hides are full of them.
     

  3. Only thing I can figure out is something in the water everything else is the same. Smells like yeast.
