Knife Sharpening

    I was curious what everyone used to sharpen their knives in their shops. I currently use a Commercial Grage Chef's choice electric sharpener and it works great but I don't think they make it any more and am looking for alternatives just incase. My dad is old school and loves a steel but I am not a steel kind of guy.

    I use a paper wheel.

    I second what Bob said, that is a great sharpener for a good price.
     
  5. Work Sharp here as well. I also use a steel to touch up the blade as I work.

    Same here, I take the guard off and use it to rough up inside ear liners and thin the edges. I use it for sharpening my needles, my necker fleshing knife, wires for bird taxidermy and anything else that needs a little grinding. Its awesome, and it really puts a nice edge on a knife.
